This still twirks my mind unpleasantly. All the constituent parts seem as though they were cooked gently enough to preserve much of their shape and texture, but then crammed into the tin under sufficient force to blur the boundaries between one vegetable and another.

Who feels particularly compelled to get these particular ingredients in this form?

I found it works great as a pasta sauce, was great smeared onto a sandwich, and a bit on toasted baguette as an app was nice. Layer on top of zucchini and add balsamic vinegar and oil. Put on the barbecue for about 15 minutes, delightful!

I loved this one. It really was yummy cold or warm. I especially liked it paired with meat as the topper. I was googling the ingredients of this canned product so that I could make it myself, and I found this blog. That one is imported from Greece, this one is from Bulgaria. Lots and lots and lots of them.

Add some feta on the side and you have a typical Greek dish, except they would use plenty of olive oil. The amount of oil in the can is appropriate for this dish. Using it as a pasta sauce as someone else mentioned would also be an authentically Greek idea. I wonder if the canning process does something unpleasant to oils with lots of phenols? Elena, did you ever find a recipe for this?

Google either and you will find recipes. I love the sweetness in this dish. If you want to omit the sugar, but like the sweetness, I suggest adding a few raisins early in the cooking. I ate it with falafel and some feta. Can you say amazing? They had actually sampled it that way at my local store — so good and a perfect lunch! This is so yummy!! Clearly the original poster does not have much experience with authentic Greek food. This reminds me of both an appetizer I had while in Greece as well a traditional Italian eggplant caponata.

Love it as spread, a dip, and a sauce. I had it cold last night and a little minced garlic helped. I will try it today with that and also some lemon juice.
